Mararī is a kelp fish found throughout New Zealand, but most commonly in the south. It grows to about 20 in. in length, is purplish grey to olive green, lighter below.

An alternative name is “greenbone” from the fact that the bones and the flesh in contact with them are stained bright bluish-green.

Mararī are medium in texture, have succulent white flesh with medium to thick flakes which is suited to most cooking methods.
